Gluten Free Cauliflower Bake

Wesley is recently (and by recently I mean since October) GLUTEN FREE. This has completely changed our lives. Sometimes I think for the better....but when I pass a Wendy's, or Panda Express....I have to say that I shed a small tear. Now, I can still go to these places by myself but it was so easy to send him for green bean chicken and a fried rice bowl! Boom. Love it. Now - I feel guilt. Guilty when I eat good sourdough. Guilty when I can have legit Chinese food (yes...soy sauce has gluten in it....yes...we have gluten-free soy sauce...blah....). But honestly, it has been good for both of us. I actually eat WAY less carbs, and way less junk. That being said, I do make a significant amount of more healthy food. I love cooking and any time I can find a recipe that tastes good and is gluten-free (GF) I feel like it is a WIN!!! Wesley will eat practically anything...but I won't. So I am the one who has to approve things. I am going to start two labels on here called "glu...

Uniforms

Everyone knows that police officers wear a uniform. Whether its blue, black, brown or even green - officers of the law are separated by their clothing and what is on their belt. Being a teacher, I have somewhat of a uniform myself. Only, I can switch it up every once in a while. But lets face it - we all have our "uniforms" or things we like to go to when we can't find anything to wear...(this statement often gets me looks from my husband as he points to my sets of drawers and my 1/2 of of the walk-in). Every day before work, Wesley puts on a belt. He has to wear one because it holds all of the necessary items for him to do his job.  My belt on the other hand....is because I love belts. I really don't know why I don't have more....I mean....I obviously rock them. ;o) ::woven belt/target::    ::chain bracelet/lia sophia:: Police officers are very picky about their boots. Keeping on Schedule

It's 5:30a  and my alarm is going off. Of course I am going to push snooze...let's be honest. I never  wake up at 5:30...I just like to push snooze. Maybe more than once. I wake up, shower/get ready, make my breakfast/coffee, make lunch, get Boo's things ready for the day, let Susie out and then feed her...give Wes back the monitor I've kept with me all morning and then get going. Hopefully by 7:00 to get to school. Wes usually wakes up when Boo does. Anywhere from 7a - 8:30a.  Feeds him, plays with him, runs errands if necessary, three days out of the week takes him to an amazing pre-school, eat, play, nap, repeat... Then I get home. He goes to work 4/7 days a week and we start all over. It is safe to say we are exhausted. Last night was a first. We went to our first baseball game as a family and it was so much fun!  Our wonderful friends took us to their seats (perfectly down the first base line) so it was the perfect view. Did I say it was perfect? Boo did such a good job. He had gone without a nap ::danger, danger:: but it did not effect him!! He lasted until after the 7th inning before he got a little grumpy! Thankfully Daddy had walked him around so he could see everything before that :o) He even got to hang out with some of Daddy's police buddies for a bit! I definitely had a moment of....wow....what is this going to be like in one, three, ten years?? Will we be able to sit? Will either of us see the game, or will it be watched through the fence of the playground? Will I be bringing extra clothes because Boo will be soaked from the Bubblers? Made me smile for that moment...made me remember how much I love living here. It was about a two block walk back to the car that night....the ...
